We’re proud to announce that Chef Aom Sujira Pongmorn, the visionary behind KHAAN Bangkok, has been selected to join the prestigious World Gourmet Festival 2025, hosted at the iconic Anantara Siam Bangkok Hotel from September 22–28, 2025.

The World Gourmet Festival is one of Asia’s most celebrated international culinary events. For its Silver Jubilee edition, the festival brings together 16 Michelin-starred restaurants, Green Star pioneers, and some of the most influential chefs from across the globe. This year’s celebration is especially meaningful, as it showcases how Bangkok has evolved into a true culinary capital.

Representing Thai Cuisine on the Global Stage

Chef Aom, renowned for her bold reinterpretation of Thai street food into elegant fine dining, will showcase her culinary philosophy that combines zero-waste practices, local sourcing, and modern techniques. At KHAAN Bangkok, Chef Aom works closely with Thai farmers and fishermen to reimagine nostalgic flavors through refined tasting menus that reflect Thailand’s diverse culinary heritage.

“It’s an incredible honor to be part of this international celebration of culinary excellence. I’m proud to represent Thai street food in a new light—refined, creative, and deeply respectful of our roots,” said Chef Aom.

A Creative Menu Honoring Thailand’s Culture

As part of her showcase at the World Gourmet Festival, Chef Aom will present select dishes from her newly launched 2025 tasting menu at KHAAN Bangkok. Her latest creation—Crocodile Tongue with Wild Herbs—draws inspiration from traditional forest cuisine in Thai culture. By embracing ingredients such as crocodile tongue, which is prized for its unique texture, she aims to provoke curiosity while celebrating forgotten Thai food traditions.

“In Thai culinary history, wild meats like deer and boar were once common. I wanted to bring that narrative forward with respect and precision. Cooking crocodile tongue using Thai herbs like fingerroot and young peppercorn in a pad cha style is my way of merging tradition with technique,” Chef Aom shared.

This bold dish reflects her commitment to using minimal intervention to let the ingredients shine—a hallmark of her evolving approach to fine Thai cuisine.

KHAAN Bangkok’s Sustainable Philosophy

Chef Aom’s participation also shines a light on KHAAN’s unwavering dedication to sustainability. Every element of her menu is designed with a zero-waste philosophy, repurposing trimmings, vegetable peels, and offcuts to create sauces, broths, and even desserts. Dishes like “Cassava: มัน 5 นาที” transform humble local ingredients into culinary statements that honor both land and culture.
